School cafeterias have swung from one extreme to another. All I'd like to see in my local cafeteria is balance.

And, I'd like to see more fresh food and fewer carbohydrates. Cooks have to follow the federal mandates for menu and servings. Last year we began a salad bar on most days. The kids love it and are getting something besides processed foods. We can do much better.
